Baked Fish and Vegetables

2 lbs. fish (Orange Roughy)
1 to 1 1/2 tomatoes, sliced
1 green pepper, sliced
1/2 medium onion, sliced
Juice of 1 lemon
2 oz. water
Sweetener to taste (e.g., Sweet 'N Low, lite brown sugar, or Nutra Sweet)


Place fish in baking pan. Spray pan with Pam lightly. Add salt and pepper to taste. Use lite salt. Layer the vegetables on top and squirt lemon juice over all. Mix water with sweetener and pour over top. Bake at 350 F for approximately 25 minutes. Delicious.
