Pacific Halibut Stew

2 1/2 lb. Halibut stew, fresh or frozen
1 medium onion, chopped
3/4 cup celery, diced
3 Tbsp. butter
3/4 cup rice
2 1/2 cups boiling water
1/2 tsp. chili powder
1/4 tsp. thyme
1 1/2 tsp. salt
1/8 tsp. pepper
1/4 lb. Shrimp
1 (10 oz.) package frozen mixed vegetables
2 Tbsp. parsley, chopped
2 (16 oz.) cans whole tomatoes

Cut Halibut in 1 inch chunks. Saute onion and celery in butter. Add rice, boiling water, and seasonings. Cover and simmer 15 minutes. Add Halibut, tomatoes, Shrimp, and frozen mixed vegetables. Bring to a boil. Reduce heat. Cover and simmer 10-12 minutes or until Halibut is tender. Sprinkle with chopped parsley.

Makes 6 generous servings
