Fried Squid

1 lb. fresh Squid
3 Tbsp. vegetable oil
1/3 cup onions, thinly sliced
1/2 cup celery, finely chopped
1 1/2 Tbsp. beef consomme or sherry
1 Tbsp. soy sauce
Dash of Tabasco
Salt and pepper


Clean Squid and cut into 1 1/2 inch strips. Heat small amount of vegetable oil and cook onions and celery until transparent. Add Squid, remaining vegetable oil, consomme or sherry, soy sauce, Tabasco, and salt and pepper to taste. Cook quickly, stirring with spatula until browned, approximately 7 to 10 minutes.


Serves 2 to 4
