2 lbs. Halibut
1/4 cup butter
2 Tbsp. chopped green onions
1/4 cup chopped mushrooms
1/4 cup flour
1/2 tsp. salt
White pepper
1 3/4 cups milk
3 Tbsp. sherry
1 1/2 cups Cheddar cheese
1/4 cup bread crumbs, browned in 1 Tbsp. butter

Cut Halibut in bite size and place in pan with 4 cups cold water, 1 1/2 teaspoon salt, 4 peppercorns, 1/4 cup vinegar, 2 slices lemon, 1 slice onion, and parsley. Cover; bring to boil. Simmer 3 minutes. In pan, saute onions and mushroom; blend in flour, salt, and pepper. Add milk until thickened. Stir in cheese and heat. Add Halibut. Cover with bread crumbs. Bake at 400 F for 10 minutes.
