Parmesan Fillets

1 1/2 lbs. Fillets (Orange Roughy)
1/2 tsp. salt
Pepper to taste
3/4 cup sour cream
1/2 cup grated Parmesan cheese
1 Tbsp. chives
1/4 cup fine dry bread crumbs

Wash and pat Fillets dry with paper towel. (NOTE: If Fillets are allowed to soak in milk for 1 hour before starting, the fish have a milder taste.)

Arrange in greased baking pan. Sprinkle salt and pepper over fish. Mix sour cream with cheese, chives and crumbs. Spread over fish. Dust with paprika. Bake at 425 F for 12 minutes just until fish flakes.
