Poached Flounder

1 lb. Flounder Fillets
2 Tbsp. soy sauce
3 scallions, cut up
3 Tbsp. oil
3 Tbsp. shredded fresh ginger root

Place fish in frying pan. Cover with water. Bring to a boil, then simmer 5-7 minutes. Put soy sauce in small bowl, add scallions and add a dash of pepper. Put oil in small saucepan and heat; throw shredded ginger in hot oil, approximately 1 minute. Will turn golden.

Drain fish with slotted spoon or spatula and place on platter. Pour scallions and soy sauce on top. Pour ginger and hot oil over fish, scallions, etc. Serve with or over rice.

Serves 4.
