Poached Halibut With Cucumber Sauce

3 cups water
1 tsp. salt
6 peppercorns
1 sprig parsley
Cucumber slices (optional)
1/2 cup white wine
1 bay leaf
Dash of thyme, crushed
1 1/2 lb. Halibut Steaks
Creamy cucumber dill sauce


Combine water, wine, salt, bay leaf, peppercorns, thyme and parsley; bring to a boil and add Halibut. Reduce heat and cover and simmer 10 minutes per inch of thickness measured at it's thickest part or until Halibut flakes easily when tested with a fork. Gently remove Halibut and drain. Serve hot or chilled. Garnish with cucumber slices. Serve with creamy cucumber sauce.
