Popular Perch Bake

1/4 cup butter or margarine
1 tsp. dry mustard
1/2 tsp. salt
1 Tbsp. lemon juice
1 Tbsp. horseradish
1 lb. Perch Fillets


Topping:
1 Tbsp. butter or margarine, melted
1/4 cup bread crumbs
1 Tbsp. dried chives or 1 1/4 tsp. fresh chopped chives
1/8 tsp. pepper
1/8 tsp. pepper sauce


Oven at 350 F. In ungreased 8 inch square baking dish (1 1/2 quart) melt 1/4 cup butter in oven. Add remaining Perch ingredients, except Perch, stir to blend. Dip both sides of Perch onto melted seasoned butter. Place into same baking dish.


In a small bowl combine all topping ingredients. Stir to blend. Sprinkle over Perch. Bake near center of 350 degree oven for 20 to 25 minutes or until fish flakes with fork.
