Red Snapper Amandine

6 Fillets red Snapper
Salt and pepper
Flour
1 1/2 cups butter
1 cup sliced almonds
1 lemon


Wipe Fillets with damp cloth. Sprinkle with salt and pepper, dredge with flour. Saute in 1/2 cup melted butter until done, but not too brown. Place Fillets in pan.


AMANDINE:


Mix almonds and 1 cup melted butter in a skillet. Heat until almonds are light brown. Pour almond butter mixture over Fillets and sprinkle with lemon juice. Place in 375 degree oven for 3-5 minutes or until nicely brown. This sauce is good with other types of fish also.
