Saucy Fish Fillets

1 lb. Flounder
1/2 cup flour
1 tsp. salt
1/2 tsp. pepper
2 Tbsp. oil
8 Tbsp. butter
2 Tbsp. lemon juice
2 Tbsp. finely chopped parsley

Place flour, salt, pepper in plastic bag. Add fish Fillets one at a time. Use 2 fry pans. Heat 1 tablespoon butter and 1 tablespoon oil over medium heat until hot. Add Fillets turning once until golden. Cook 4 minutes transfer to platter. Add remaining butter, lemon juice and parsley to pan. Cook 1 minute. Pour over Fillets and serve.
