Scalloped Fish

2 lb. fillet or sliced Haddock
1/2 cup coarse cracker crumbs
2 cups milk
3 Tbsp. butter
2 Tbsp. onion, finely chopped
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup buttered crumbs or crushed potato chips
Paprika


Cut fish into serving pieces. Arrange fish and cracker crumbs in alternate layers in a greased casserole. Combine milk, butter, onion, and seasoning. Heat to scalding and pour over casseroles. Top with buttered crumbs or potato chips and a generous sprinkling of paprika. Bake at 350 F for 30 minutes or until browned.


Yields 6-8 servings.
