Shark Creole

1 lb. Shark chunks
1/3 cup oil
1/3 cup flour
1 cup water
1/2 cup chopped green onions
1/4 cup chopped green pepper
1/2 cup chopped parsley
2 cloves minced garlic
Cayenne pepper to taste
1/2 tsp. thyme
2 whole bay leaves
1 can (1 lb.) tomato sauce
1 lemon, sliced (for garnish)
3 cups cooked rice


Prepare by heating oil in large skillet, blend in flour over medium heat, stirring constantly until brown. Add water gradually and cook until thick and smooth. Add remaining ingredients; except rice and lemon. Cover and simmer for 15 minutes. Remove bay leaves, serve over rice and garnish with lemon slices.
