Sherried Baked Haddock

2 lbs. fresh skinned Haddock
3 Tbsp. margarine
2 Tbsp. flour
1/8 tsp. salt and pepper
1 1/2 cups milk
1/4 cup sherry
3 Tbsp. grated cheese
1 Tbsp. parsley
1 Tbsp. melted butter
1/4 cup bread crumbs


Lay fish in buttered 13x9 inch baking dish in a single layer. In a medium saucepan, melt 3 Tbsp. butter and stir in flour. Gradually add milk to form white sauce. Cook over medium heat, stirring constantly until thickened. Add wine, cheese and parsley flakes. Pour over fish in baking dish. Combine 1 Tbsp. melted butter and bread crumbs and sprinkle over top. Bake at 350 F for 25 minutes.
