Snapper With Lime Mayonnaise

4 (1/2" thick) red Snapper Fillets
Vegetable cooking spray
1/3 cup reduced-calorie mayonnaise
2 Tbsp. plain low-fat yogurt
1/2 tsp. lime rind, grated
1 Tbsp. lime juice
1 tsp. dried tarragon
Dash of white pepper
Parsley, chopped
Lime slices


Rinse Fillets with cold water and pat dry. Arrange in a 12 x 8 x 2 inch baking dish coated with cooking spray. Combine mayonnaise, yogurt, lime rind juice, tarragon and pepper; spoon evenly over Fillets. Bake uncovered at 350 F for 15 minutes or until fish flakes easily when tested with a fork. Transfer Fillets to a serving platter; garnish with parsley and lime slices.


Yield 4 servings
