Sole Supreme

4 Fillets of Sole or Orange Roughy
1/2 lb. fresh mushrooms
1/4 cup chopped fresh parsley
1 Tbsp. lemon juice
1 Tbsp. margarine
3/4 c.cream
1/2 Tbsp. grated Parmesan
1/2 Tbsp. fine, plain bread crumbs


Sprinkle fish with salt and pepper.


Arrange shallow baking dish with fish. Baking dish needs to be buttered.


Sprinkle fish with parsley.


In saucepan: Melt margarine with lemon juice. Add mushrooms; add salt. Saute mushrooms over low heat. Blend in flour. Gradually add cream and simmer until thick.


Pour thick sauce over fish. Sprinkle with bread crumbs and grated cheese.


Bake at 450 F 20-25 minutes, until golden brown.
