Stuffed Filet of Sole

1 lb. Fillet of Sole
1/3 cup cooked rice
1/3 cup chopped mushrooms
1/3 cup shallots
1/2 cup lemon juice (separated 1/4 cup and 1/4 cup)
Broccoli, chopped, cooked
2 Tbsp. margarine
Paprika and pepper
1/2 cup Cheddar cheese


Saute shallots, mushrooms and cooked broccoli in margarine. Remove from stove. Add 1/4 cup lemon juice, rice, pepper and 1/2 cup Cheddar cheese. Put stuffing into fish and roll up. Secure with toothpick. Melt more margarine and add remaining 1/4 cup lemon juice. Pour over fish, sprinkle with paprika. Bake at 350 F until fish flakes.
