Stuffed Flounder

1 cup minced onion, white
1 1/2 cups minced celery
1/2 cup minced shallots
3 cloves minced garlic
1/2 lb. oleo
1/5 bunch chopped parsley
1 cup dry chopped boiled Shrimp
1/2 cup lump Crab Meat
2 Tbsp. flour
1 cup milk
2 1/2 cups bread crumbs
1 cup dry white wine

Salt and pepper to taste. Saute onion, celery and garlic in oleo until done; add flour and blend. Add milk and white wine, cook until thick. Add Shrimp and Crab Meat, finish thickening with bread crumbs.
