Stuffed Flounder Fillets

2 - 2 1/2 lb. Flounder Fillets
1 package frozen chopped spinach
1 package Ritz crackers (crushed)
Garlic (to taste)
Oregano (to taste)
Salt, pepper (to taste)
3/4 cup cooking wine
1 stick butter
1 deep sided baking dish

Crush crackers, add salt, pepper, garlic, oregano, chopped spinach (cooked and drained) and melted butter.

Lay out fillet, add stuffing and roll. Place seam side down. Continue until all Fillets are stuffed. Place bacon strips over Fillets and pour over cooking wine. Bake uncovered in a 375 degree oven for 20-25 minutes.

Serves 8.
