Stuffed Flounder Fillets

2 large Flounder Fillets or other white fish
1/2 cup grated carrots
1/2 cup chopped onion
1/2 cup chopped fresh mushrooms
1 Tbsp. margarine
1 cup wheat bread crumbs
1 Tbsp. parsley
1/8 tsp. sage
1/8 tsp. basil
2 Tbsp. lemon juice
Salt and pepper to taste

Saute carrots, onion, and mushrooms in margarine and set aside. Combine bread crumbs, parsley, sage, and basil. Mix crumb mixture, lemon juice, and sauteed vegetables together.

Sprinkle fish Fillets with salt and pepper. Place a small heap of stuffing mix on Fillets, then roll up and secure with toothpicks. Place seam-side down in baking dish. Place remaining stuffing around fish rolls. Bake at 350 F until fish is flaky.
