Stuffed Flounder Fillets

2 tsp. olive oil, divided
1 cup chopped mushrooms
1/2 cup chopped scallions (green onions)
1 garlic clove, minced
1/4 tsp. salt
1/8 tsp. each pepper and ground thyme
1 Tbsp. plus 1 1/2 tsp. plain dried bread crumbs
2 Flounder Fillets (5 oz.) each
1 tsp. each lemon juice and chopped fresh parsley


Preheat oven to 400 F. In small skillet heat 1 teaspoon oil add vegetables and seasonings and saute 5 minutes. Stir in crumbs. Sprinkle Fillets with lemon juice and spoon half of stuffing onto each; roll Fillets to enclose filling. Place, seam side down, in shallow 1 quart casserole and sprinkle each roll with 1/4 teaspoon oil; bake 15 minutes. Serve sprinkled with parsley.
