Stuffed Pompano

Pompano (or Snapper)
small Shrimp
Salt and pepper
Stuffing
Bacon strips


Stuffing:
2 lbs. cooked Shrimp
1 lb. Crab Meat
1 cup Italian bread crumbs
1/2 cup sherry (optional)
1/2 bunch parsley
2 eggs
Salt and pepper


Have butcher prepare fish with head off and a pocket - salt and pepper, then stuff. At top of pocket, put whole Shrimp and bacon slices. Place in covered dish. Bake 30 minutes at 300 F.


Stuffing: Mix all ingredients. Put parsley and onion in food processor. Cook slowly. This will stuff 12 small fish or one large fish.
