Stuffed Red Snapper

4 lb. Fillets of red Snapper
1 lb. Shrimp, peeled and deveined
1 1/2 cups chopped onion
1/2 cup chopped celery
1 stick oleo
1/2 tsp. sugar
1 tsp. salt
1/2 tsp. cayenne pepper and black pepper
4 eggs
3 stale hamburger buns
1 Tbsp. flour
1/2 cup bread crumbs


Boil Shrimp; drain and chop coarsely. Dice about 1 pound of Fillets; set aside. Saute onion and celery in oleo; add sugar, salt and peppers. Stir in Shrimp and 1 pound of chopped Fillets and cook for 5 minutes.


Combine crumbled hamburger buns, eggs, flour and bread crumbs in bowl; mix well. Add Shrimp mixture. Stuff Fillets with mixture; season and butter each side. Broil in oven 10 minutes on each side. Serve with garlic butter.
