Swiss Baked Fish

1 1/2 lb. Orange Roughy
3 Tbsp. Shredded Swiss cheese
2 Tbsp. parsley

Rinse fish in cold water and pat dry. Mix cheese and parsley together and set aside.

3 Tbsp. melted butter
1/4 tsp. salt and pepper
1 cup milk
2 Tbsp. flour

Roll each fillet with cheese mixture and secure with toothpicks. Place rolls on end in greased baking dish (9x9). In saucepan, melt butter, stir in flour, salt and pepper. Add 1 cup milk. Stir until thick. Pour over fish rolls. Bake uncovered at 350 F for 25 to 30 minutes or until fish flakes easily. Sprinkle with paprika.
