Fish Tacos

Organic corn tortillas
Orange Roughy fish
Mayonnaise
Lettuce (head, Romaine)
Tomato
Oil (canola)
Organic refried beans


Cook tortillas in 3 tablespoons of hot oil, fold over to make taco shell. Drain off on paper towel. Cook fish in corningware dish with a little butter, in hot 350 degree oven about 20 minutes. Spread mayonnaise inside taco shells. Remember to warm the beans. Place beans, fish, lettuce (shredded), chopped tomatoes inside taco shells. Top with sour cream and guacamole.
