Fish Fantasia

1 Tbsp. butter or margarine
1 clove garlic
1/2 cup sliced onion
1/2 cup diced green pepper
Pinch ground red pepper
16 oz. whole or stewed tomatoes
1 1/2 lbs. Sole or Flounder (or other fish), thawed if frozen


Melt 1 tablespoon butter in skillet; add 1 crushed garlic clove, 1/2 cup each sliced onion, diced green pepper, and red pepper. Cover; cook 5 minutes. Stir in tomatoes; simmer uncovered 10 minutes. Add fish and spoon sauce over fish. Cook 8-10 minutes.


Yield: 4 servings
