Fish Fillets Florentine

1 container (8 oz.) soft cream cheese with olives & pimento
1 package (10 oz.) frozen chopped spinach, thawed & squeezed dry
4 Flounder or Sole Fillets (about 4 oz. each)
1 Tbsp. milk
1/2 tsp. lemon juice
1/8 tsp. pepper

Mix 3/4 cup soft cream cheese and the spinach in a small bowl. Mound 1/3 cup of the mixture across the middle of each fillet. Roll up or tuck the fish around the filling. Place seam sides down in a lightly greased baking dish. Add milk, lemon juice and pepper to cream cheese remaining in the container. Stir until smooth. Spoon evenly over fish.

Bake in preheated 375 degree oven for 20 minutes, or until the fish flakes easily when tested with a fork and the sauce is browned.
