Fish Fillets Florentine

1 package frozen chopped spinach
3/4 cup soft bread crumbs
3 Tbsp. mayonnaise
1 1/2 tsp. onion, grated
1/4 tsp. salt
1/8 tsp. white pepper
1 1/2 lbs. fillet of Haddock or Trout
1/4 cup melted butter or margarine
1 cup grated sharp American cheese


Cook and drain spinach well. Combine lightly with crumbs, mayonnaise, onions and seasonings. Sprinkle fish with additional salt and pepper. Place half of fish in a well greased shallow pan. Cover with spinach mixture and top with remaining fish. Brush with melted butter. Bake uncovered at 375 F for 30 minutes. Remove from oven and sprinkle with grated cheese. Return to oven until cheese melts.
