Fillets of Sole Thermidor

5 Tbsp. butter
8 Sole or other Fillets
2 tsp. salt
1/2 tsp. seasoned salt
1/8 tsp. pepper
1 1/4 cups milk
3 Tbsp. flour
1 cup grated Cheddar
3 Tbsp. sherry (optional)

350 degree oven. Melt 2 Tbsp. butter and brush over Fillets. Sprinkle with salt, seasoned salt and pepper. Roll each fillet and place seam side down in baking dish. Pour 1/2 cup milk over Fillets and bake 25 minutes, until fish flakes.

Make cheese sauce using remaining ingredients. Spoon liquid from fish. Stir 1/4 cup into cheese sauce. Pour over fish and sprinkle with paprika. Broil 1 minute.
