Fish Normandy

2 Tbsp. margarine
2 onions, finely chopped
1 1/2 tsp. cider vinegar
1/2 tsp. ground white pepper
4 apples, sliced
1 pint apple juice
1/2 tsp. salt
6 Whitefish Fillets (4 oz. each)


Melt margarine in large saucepan. Add onions and cook until soft. Add apple slices, apple juice, vinegar, salt and pepper and cook 1 minute longer. Arrange fish Fillets in single layer in large pan. Pour apple mixture over fish. Cover with foil and bake at 400 F for 10 minutes, or until fish flakes. Garnish with parsley.
