Italian Paprika Fillets

1 cup bread crumbs
1/3 cup grated Parmesan cheese
1 tsp. Italian seasoning
1/2 tsp. paprika
1/4 cup skim milk
1 egg white, slightly beaten
1 lb. fresh or frozen Sole or Flounder Fillets
2 Tbsp. margarine, melted
1 Tbsp. fresh parsley

Lightly oil broiler pan. In a shallow dish, combine first 4 ingredients. In another shallow dish combine milk and egg whites. Coat Fillets with dry mixture. Shake off excess. Dip into egg mixture, then coat again with dry mixture.

Place onto broiler pan; drizzle with 1 tablespoon margarine. Broil about 4 inches from heat for 3 1/2 to 4 1/2 minutes or until golden brown. Garnish with parsley.

Yields 4 servings
