Lemon Batter Fish

1 cup unsifted flour
2/3 cup water
1/3 cup lemon juice
1 egg, beaten
1 tsp. baking powder
3/4 tsp. salt
1/2 tsp. sugar
Juice
Flour
Vegetable oil
1 lb. fish (frozen or fresh)
Trout Fillet or other fish


In medium bowl, mix flour, water, 1/3 cup lemon juice, egg, baking powder, salt, and sugar. Dip fish in additional lemon juice. Coat with flour. Coat with batter of first 7 ingredients.


Tip: Use lemon batter to coat Shrimps and Scallops. Proceed as above, except omit dipping seafood in lemon juice.
