Mackerel Salad

1 king fish fillet or Mackerel fillet
1 cup chopped celery
1 cup mayonnaise
1 cup onion, chopped
3 Tbsp. lemon juice
1/4 cup chopped parsley
1 tsp. salt
1 tsp. pepper
1 Tbsp. dill weed


Cook fish in a covered steamer over boiling water for about 15 minutes. If steaming is impractical poaching will suffice. Remove all fish skin and bones. Place in refrigerator overnight. Flake chilled Mackerel with a fork. Mix all ingredients in bowl. Refrigerate for a couple more hours before serving. Good served with crackers.
