Quick Baked Fish With Green Rice

2 cups cooked rice
1 (10 oz.) package frozen chopped spinach, thawed
1/2 cup shredded cheddar cheese,divided
1 lb. Fish Fillets (Sole, Flounder or Halibut) thawed, if frozen
Salt and pepper to taste
2 Tbsp. lemon juice
2 Tbsp. butter or margarine

In greased 8 x 8 x 2 baking dish or 1 1/2 quart casserole dish, mix well rice, spinach and 1/4 cup cheese. Season fish with salt and pepper; arrange over rice mixture. Sprinkle with lemon juice then dot with butter. Top with remaining 1/4 cup cheese. Bake in 375 degree oven 20 to 25 minutes, or until fish flakes easily with fork.

Makes 4 servings
