Red Snapper In Ginger Sauce

1 1/2 lb. red Snapper Fillets
1/3 cup milk
Fine dried bread crumbs
4-5 Tbsp. butter
2 Tbsp. green onions, chopped
Juice of 1 lime
1/4 tsp. ginger
1/4 tsp. salt
Freshly grated pepper


Dip fish in milk, then bread crumbs. Brown in 2-3 tablespoons butter until fish is flaky. Remove from pan and keep warm. Add remaining butter and cook onions. Add lime juice and seasonings. Cook down slightly. Pour over fish and serve immediately.
