Seafood Delight

1/2 lb. carrots
1 large onion
1/2 lb. potatoes
4 bacon strips
6 oz. lemon juice
2 Tbsp. vinegar
1 stick butter or margarine
1/2 cup white wine
1 Tbsp. salt
Pepper to taste
1 (2 to 4 lb.) Flounder, headed and tailed and cleaned


Grease and flour large baking pan. Place Flounder in pan. Cut Flounder into 4 to 5 places and pack with butter or margarine; place bacon strips over cuts; slice carrots and potatoes to bite size and place along side of Flounder. Pour in lemon juice, white wine and vinegar. Slice onions and place on top of Flounder. Add salt and pepper. Bake in 350 degree oven for 1 hour.


Serves 6. Makes its own gravy.
