Seafood Medley

2 Tbsp. butter
2 onions, minced
1/4 lb. White Fish (cut in 1/2" pieces), Sole, Flounder
1/4 lb. Scallops
1/4 lb. small Shrimp
2 Tbsp. parsley
Salt and pepper

White Sauce:
3 Tbsp. butter
2 1/2 Tbsp. flour
1 1/2 cups hot milk
Salt and pepper to taste

2 Tbsp. dried bread crumbs 2 Tbsp. Parmesan cheese

Melt butter; add onion and cook until soft. Add all fish, simmer gently until opaque. Add parsley, salt and pepper. Remove from heat. Fold in white sauce and egg. Spoon into coquilles baking shells or individual casseroles. Sprinkle with bread crumbs and cheese. Bake in 375 degree oven for 15-20 minutes.
