Skillet Fish Italiano

1 small onion, sliced
2 Tbsp. butter or margarine
1 lb. Flounder or Sole Fillets
2 Tbsp. lemon juice
2 tsp. dried oregano
2 cups (about 1 lb.) sliced zucchini
1 cup fresh mushrooms
1/2 cup chopped tomatoes
1/2 cup shredded Swiss cheese


In a large skillet cook onion in butter until tender, about 5 minutes. Add fish, lemon juice, oregano, zucchini and mushrooms. Cover and simmer 10 minutes. Top with tomato and cheese. Simmer 2 minutes longer, or until cheese melts.
