Flounder Casserole

3 lb. fresh Flounder
1/4 lb. mushrooms, chopped
1/2 cup sherry
1/4 cup butter
4 Tbsp. flour
1 cup light cream
1 cup milk, as needed
1 onion, chopped
Old Bay seasoning
1/3 lb. Jarlsberg or Swiss cheese
3 tomatoes
Lawry's salt

Salt one side of Flounder pieces with Lawry's salt. Roll up. Place in two rows in a long baking dish. In between and on ends put slices of tomatoes and cheese.

Saute mushrooms and onions. Make a cream sauce with butter, flour, sherry, cream and milk. Add Old Bay, paprika, salt and pepper to taste. Stir in mushrooms and onions. Pour over fish. Bake at 350 F for 45 minutes, until brown and bubbly.
