Breaded Fillet of Sole

1 lb. Fillet of Sole
1 egg, slightly beaten
1/2 cup bread crumbs
1/8 cup grated Parmesan cheese
1/2 tsp. paprika
Salt and pepper to taste
2 Tbsp. butter, melted
1 Tbsp. lemon juice

Dip fish in egg. Mix together dry ingredients. Roll fish in dry mixture. Fold fish in half and place in greased baking dish. Mix together butter and lemon juice. Pour over fish. Bake at 400 F for 20 minutes.

Serves 4
