Red Snapper with Mandarin Oranges and Raspberries

2 Red snapper fillets
2 tb Rasberry flavored cassis
1/2 c Sliced almonds
1/2 c Mandarin oranges
1/2 c Fresh raspberries
2 tb Unsalted butter
1 tb Sunflower oil
1 oz White wine
1 ts Garlic powder
Flour


Heat butter and oil in a copper skillet over medium heat. Lightly coat the fillets with flour, place in skillet and sprinkle with white wine. In a sauce pan heat butter and garlic powder over a low flame. Add almonds, mix and set aside.

Cook fillets over medium flame for two minutes on each side until brown. When done, place the fillets on a plate with rasberry cassis and sprinkle almonds on top. Place fillets under a broiler for a few seconds.

Decorate with mandarin oranges and raspberries.
