Snapper with Garlic Mayonnaise

1 Whole red snapper (about 2 lbs.)
Salt
1 Lemon, cut in wedges
Vegetable oil
2/3 c Mayonnaise
1 ts Pepper
1 ts Lemon juice
2 Cloves garlic, chopped

Rinse fish under cold running water, pat dry. Place on large greased piece of foil. Sprinkle inside cavity with salt; place lemon wedges inside. Brush outside of fish with oil.

In bowl, combine mayonnaise, pepper, lemon juice and garlic; spread over outside of fish. Place another large piece of greased foil over fish and fold edges together to seal in fish.

Grill fish 4 inches from heat for 10 minutes per inch of thickness or until fish flakes easily when knife tip is inserted at back bone. Makes about 4 servings.
