Baked Speckled Trout with Lime Sauce
2 lb Speckled trout fillets
2 Lg. tomatos coarsely chopped
4 Scallions chopped
1 c Swiss cheese, shredded
1 1/2 t Salt
1/2 t Black pepper freshly ground
1/4 c Butter melted
1 T Balsamic vinegar
3 T Grated onion
1 t Chopped dill
Arrange the fillets in a 10" x 16" greased baking dish. Sprinkle the
grated onion, salt, pepper, and chopped tomatos over the fillets.
pour the melted butter over the top of the filets. Broil 4 inches
away from the heat for 10-12 minutes. While fish is cooking juice the
limes. Add the chopped scallions to the juice along with the balsamic
vinegar, and the dill. Remove the fish from the oven Sprinkle with
the Swiss cheese then pour the lime juice mixture over the fillets
