"Super Good" Fish Loaf
1 lb. raw Halibut, Flounder, Scrod, Scallops, Shrimp or combination
2 cups fresh, soft bread crumbs
1 cup cream
1 tsp. salt
4 egg whites, stiffly beaten
Chop fish very fine. Soak bread crumbs in cream until it becomes a smooth paste. Add to fish with salt and mix well. Add egg whites and mix again. Bake for 45 minutes in a well buttered loaf pan set in a pan of hot water. Unmold on warm platter and serve with your favorite cream sauce, if desired.
