Baked Fish Monterey

1 c. carrot slices
1/2 c. celery slices
1/4 c. Parkay margarine
2 tbsp. flour
2 tsp. chopped chives
1/2 tsp. salt
Dash of ground red pepper
1 c. milk
2 tsp. lemon juice
1 c. Monterey Jack cheese, shredded
Fish fillets
2 tbsp. grated Parmesan cheese


Before cooking ingredients, broil fish for 10 minutes. Set aside. Saute vegetables in margarine. Remove vegetables. Blend flour and seasonings into remaining margarine. Gradually add milk and juice; cook, stirring constantly, until thickened. Add cheese, stir until melted. Stir in vegetables. Place fish in greased 11 3/4" x 7 1/2" baking dish, cover with sauce. Top with Parmesan cheese. Bake at 350 degrees for 25 minutes.
