Baked Lemon Fillets

1/2 lb fillet of sole
2 teaspoons lemon peel -- finely grated
1/4 teaspoon salt
1 pinch freshly ground pepper
2 lemon wedges


Spread one half of melted butter in a medium baking dish. Place fillets in dish, one layer thick. Brush with remaining butter and sprinkle with lemon peel. Season with salt and pepper. Bake in a 425 F oven 12-15 mins until fish flakes easily with a fork; fo not overcook. Serve immediately with lemon wedges.

Yield: 2-3 servings.
