Fabulous Fillets

2 lbs. fillet of sole
1/2 c. softened butter or margarine
1/2 c. sour cream
1/4 c. chopped green onions
2 tsp. dried parsley
1 clove garlic, pressed
3 tbsp. lemon juice
1 c. Ritz crackers, crushed


In a 12x16 inch pan, arrange fish fillets in single layer. Combine butter, sour cream, onions, parsley, garlic, lemon juice. Spread over fillets. Sprinkle with cracker crumbs. Bake 350 degrees about 12 minutes until fish flakes. Don't over cook. Broil for a few seconds to brown lightly. Serves 6. OR: Combine 1 stick melted butter, 2 cloves pressed garlic and 3 tablespoons lemon juice. Drizzle over fillets in pan. Combine 1/2 cup sour cream and 1/2 cup grated Swiss cheese. Spread over fish. Bake 350 degrees for 12 minutes. Can broil to brown. Both can be made earlier in the day and refrigerated. Bake before serving.
