Heringsalat (Herring Salad)

8 ounces pickled herring -- drained
2 teaspoons onion -- grated
1/2 green pepper -- seed and dice
2 tablespoons vegetable oil
1 apple; tart -- core and dice
1 tablespoon vinegar
1 orange -- sectioned and diced
4 lettuce leaves -- cupped

Combine ingredients and marinate in refrigerator for at least 1 hour.

Serve on inner tightly cupped lettuce leaves.
