Savory Baked Fish

1 tsp. instant minced onion
1/2 tsp. powdered mustard
1/4 tsp. tarragon leaves, crushed
1/2 tsp. black pepper
2 tsp. warm water
1 1/2 lb. fillet fish
Salt to taste
1 tsp. lemon juice
1/2 c. mayonnaise

Combine instant minced onion, mustard, tarragon, and pepper with 2 teaspoons warm water. Let stand 10 minutes for flavor to blend. Wipe fish. Arrange in greased baking dish. Sprinkle with salt. Add lemon juice and mayonnaise to tarragon mixture. Spread on fish. Bake at 425 degrees for 25-30 minutes or until lightly browned and fish flakes easily. Garnish with paprika. Yields 6 servings.
