Sole New Brunswick

6 oz. mushrooms, chopped fine
6-9 strips bacon, crumbled into sm. pieces
1/3 bunch parsley, chopped fine
4-5 oz. Monterey Jack cheese, grated

Saute mushrooms. Cook bacon. Mix all ingredients for stuffing. Layer two thirds of sole in baking pan, put a layer of stuffing on top of the fish (about two thirds); top with the remainder of the fish, then sprinkle with remaining stuffing. Pat with butter and put a small amount of water into the baking pan. Bake at 425 degrees for 20 to 25 minutes.
