Southern Fried Flounder

2 lb. Flounder Fillets, fresh or frozen
2/3 cup cornmeal
1/2 tsp. salt
1/2 tsp. paprika
Oil for frying

Thaw fish, if frozen. Skin Fillets. Cut Fillets into serving-size portions. Combine cornmeal, salt and paprika. Roll fish in cornmeal mixture.

To pan fry: Place fish in a heavy frypan which contains about 1/8 inch of oil, hot but not smoking. Fry at moderate 360 degree heat for 4 to 5 minutes or until brown. Turn carefully and cook 4 to 5 minutes longer or until brown and fish flakes easily when tested with a fork. Drain on absorbent paper. Makes 6 servings.

To deep fry: Place fish in a single layer in fry basket and cook in deep hot oil at 350 degrees F for 2 to 3 minutes or until golden brown. Drain on absorbent paper. Makes 6 servings.

For finer texture, use 1/3 cup cornmeal mixes with 1/3 cup all-purpose flour.
